Tacos De Lengua
Beef Tongue Tacos
These will be some of the best tacos you’ll ever taste, you will want to share this with everyone! Hopefully you can get past the whole beef tongue thing, some can, some can’t, we get it!
Ingredients
1 beef tongue (apron 3-4 pounds)
6 bay leaves
1 Tbsp of black pepper
1 onion – quartered
6 dried guajillo peppers – remove seeds and stem
2 Tbsp salt
1 head of garlic

1/2 red onion diced
1 cup cilantro

fresh lime to squeeze on tacos

Directions
First you will want to rinse off the beef tongue.
With a sharp knife cut into the top of the tongue from back to front so it cuts through the skin layer and just into the meaty part of it. This will allow more access for flavor while cooking.
Put tongue in large pot of water and fill it so there is about an inch of water above the tongue. You will then season with black pepper and salt, add bayleaves and your onion (quartered).
Bring to a boil on high then set to simmer for about 3-4 hours. When it’s done you will see the skin edges start to peel away or get loose. You can also tell its done by sticking a large carving fork in to it, if there is no resistance while pulling it out that means your tongue is cooked.
Next you’ll be making the flavor sauce separately which will eventually be added to the braising tongue pan. Add dried peppers in separate pan and boil for 10 minutes.
After peppers are done remove from water then add to the blender with garlic cloves. You can add some water if you need. Blend well.
Add the blended sauce to the pan cooking the beef tongue.
So in about 4 hours your tongue should be done. make sure the skin is starting to come apart and it will pull off somewhat easy. HOT! You’ll want to pull the skin off when its hot, its easier.
Pull off all skin and trash it. Its very tough and you won’t want to eat it.
Chop up the beef tongue into 1/4″ pieces and place into bowl or container.
