Salt Potatoes
Ingredients
- 2 pounds white- or yellow-skinned baby potatoes- thin skinned potato
- 2 ounces best-quality sea salt.
- Fresh thyme
- 2-3 tbs butter
Directions
- Add potatoes and salt in a pot put enough water to just cover the potatoes. Start on high heat, bring to a rapid boil. Reduce heat to simmer and cook potatoes until tender, 20 to 25 min.
- Pour out water then return the pan to the stove. With low/med heat roll the potatoes around in the reduced salt water until the water evaporates and the salt crystallizes, a couple minutes. Continue rolling the potatoes around until the pan is completely dry, at this point we add 2-3 tbs of butter until potatoes are completely covered in melted butter. Turn heat off and serve. Don’t forget to add fresh Thyme on your salt potatoes.
